The main ingredients used to make Mangalore Bajji include maida, curd, gram flour, rice flour, chopped onion, coriander leaves, coconut, jeera, green chillies, curry leaves, and salt. The ingredients are thoroughly mixed to form a hard batter, then shaped into a small ball and deep fried, preferably in coconut oil. It is often served with chutney. Mangalore bajji is also known as goli baje."

It's very popular in my family - my MIL makes it whenever we crave for something Chatpata! She would briskly mix curd into maida, add some spices in the form of green chillies and ginger and fry the Mangalore Bonda in sizzling oil into golden coloured tantalizing delicacies! She would hand over plates and plates of it and we would devour them as if we had been starving for days!! However, with time, all of us not growing younger, need to be watchful about the ingredients that we use in our food. Therefore, I created this Mangalore Bonda to maintain our health, infact improve our health. This is made using only semolina/Sooji and whole wheat flour and cooked in appam maker.

Ingredients:

Sooji/Rava - ½ cup

Whole wheat flour - 1 cup

Curds - as reqd, mostly 2 or 2 ½ cups

Green chillies - 2

Ginger - 1 inch

Onions - 1 medium

Cumin seeds - 1 tsp

Black pepper - ½ tsp

Eno salt - 1 sachet

Salt to taste

Oil - as reqd

Method:

Chop the onion, green chillies and ginger finely

Crush black pepper coarsely

Now, in a bowl, add all the dry ingredients - Sooji, wheat flour, black pepper, cumin seeds and salt

To the above add curds and mix thoroughly well to make a thick, smooth batter

Now, add the chopped onions, green chillies and ginger

Mix very well

Now add the Eno and to the eno, add a few tsps of water to become foamy

Mix thoroughly well the batter

Heat an appam maker

Add few tsps of oil in each slot of appam maker

Then, add the batter into the slots

Cover and cook till golden, in medium heat

Turn them around and cook the other side without covering the Apoam maker

Serve with coconut chutney
