Instant Rava Vada | Gayathiri's Cookbook

As the name says, it can be made instantly, no soaking or grinding is necessary.
It can be prepared as a snack for unexpected guests or on busy morning days.

Batter consistency is the most important step in making this vada as right amount of yogurt should be used to make the batter.The batter should not be thick or runny and the yogurt should not be very sour.

Set the batter aside for 15 minutes. If the batter becomes thick, you can add little water to bring the right consistency.

Adding baking soda will make the vada more crispy outside and soft inside.


Ingredients:
Bombay Rava (Sooji)-1.5 cups
Green chillies-4
Grated ginger-1 teaspoon
Curry leaves/Coriander leaves
Salt- As needed
Baking soda- 1/8 teaspoon (optional)
Onion-1
Yogurt- 1/2 cup + 1 tablespoon
Oil- for frying


Directions:

1. Take sooji, green chillies, grated ginger, curry leaves or coriander leaves, salt, baking soda and onion in a big bowl.
2. Add 1/2 cup yogurt and mix everything well to make a smooth batter. Add more yogurt or water to bring the right consistency.
3. Batter should not be thick or runny. Keep the batter aside for 15 minutes.
4. Heat oil over medium flame.Take a lemon size batter, pat it to a round shape.
5. Fry it in oil until golden brown.

Crispy vada is ready!!!
