Baking powder tsp. Salt tsp. Cream of tartar1 tsp. Baking soda2 eggs1 Tbsp. apple cider vinegar1 cup buttermilk3 Tbsp. organic butter, chilled in freezer for 15 minutesDirections:Preheat oven to 375 degrees F.Prepare an 4 x 8 inch loaf pan or a 10 inch cast iron pan with parchment paper covering the bottom and sides.Combine the dry ingredients (first 6 ingredients) in a large bowl. Use a whisk to combine everything and set aside.In another bowl, combine the wet ingredients: the eggs, apple cider vinegar and the buttermilk. Whisk to combine and set aside.Back to the dry ingredient bowl: grate the chilled butter into the flour mixture and combine with clean hands. Toss until the butter is coated.Pour the wet ingredients into the dry ingredient bowl and use a large spoon to combine. Don't over mix and just make sure the flour is moistened. Pour the batter into the prepared pan and push it into the corners. The dough will be sticky. Place the pan into the oven and bake for about 25 minutes. Peek in at 20 minutes just in case your oven runs hot.Turn the temperature to 400 degrees F and continue to cook for an additional 10 to 15 minutes. You want the loaf to be a nice golden brown. You can test the center with a toothpick to make sure the center is not wet. Let the loaf cool for 10 minutes in the pan and then remove the loaf, using the parchment paper, to rest on a cooling rack. I can never wait for the bread to cool completely. Besides, warm bread with some Kerrygold butter is just heavenly! I wrap my loaf in plastic wrap and leave it out on the counter for up to 5 days.
