Roland's super easy pork chops in creamy mushroom sauce are a must-try if you like pork chops. The most popular cut of pork is boneless loin chops, but they are also the hardest to cook perfectly because they don't have any fat or bones to help keep in moisture and flavour. Although we skipped this step, it is highly recommended that you soak the pork chops in salt water to turn them from tough to juicy and tender. Brining is a technique used to aid in the breakdown of muscle fibres. Prepare some mashed potatoes and blanched broccoli to go with these creamy pork chops. The sauce will also go well with some sourdough bread.

Creamy Mushroom Pork Chops Homemade Creamy Mushroom Sauce Recipe
Ingredients:
Serves 4 pax

Seasoned pork chops

Note:
To make your pork chops more tender, soak them in 1L of water with 3 tablespoons of salt for 30 minutes. This step is known as brining. If you choose to brine the pork chops, rinse them in clean water after brining. Poke the chops using a fork but skip the 1.5 teaspoons salt below and just rub the black pepper all over the pork. Skip the marinating step.

4 pork chops (weighing about 170g each)
1.5 teaspoons salt
1.5 teaspoons black pepper

Sauce
--------
2 medium onions or a large one
200g sliced button mushrooms
20g unsalted butter
4 cloves chopped garlic
1 tablespoon plain flour
200ml water or chicken stock
1 teaspoon chicken stock powder (omit this if using chicken stock)
0.5 teaspoon salt
1 tablespoon Italian herbs
200ml cooking cream
