Kaiware Daikon Harvest Daikon Salad with Nori (dried seaweed)

Live replay - Today we're finally harvesting the kaiware daikon radish microgreens we sowed last week. We're going to make a quick and easy salad with daikon radish, kaiware daikon a little mentsuyu (noodle soup base) and nori (dried seaweed). This is about as fresh of a Japanese radish salad as you can get.

RECIPE
1/2 lb daikon radish cut into match sticks
1 - 2 cups of kaiware daikon
1 -2 tablespoons of mentsuyu, to taste (dilute first if using concentrate)
1 sheet of dried seaweed toasted
katsuobushi flakes

1. Peel and cut daikon radish into matchsticks about 2inches long x 1/4in thick
2. Cut and rinse kaiware daikon
3. Place kaiware and daikon matchsticks into a large bowl
4. Top with mentsuyu
5. Cut up nori into matchsticks and mix in along with mentsuyu until evenly dispersed
6.Top with katsuobushi
