Kaleji Bun Kabab
Recipe in English:

Ingredients:
Prepare Bun Kabab Chutney: 00:19
-Lehsan (Garlic) cloves 6-7
-Hari mirch (Green chillies) 2
-Sabut lal mirch (Button red chillies) 4-5
-Hara dhania (Fresh coriander) handful
-Podina (Mint leaves) handful
-Zeera (Cumin seeds) roasted & crushed 1 tbs
-Namak (Salt) tsp or to taste
-Imli ka pani (Tamarind water) 1 Cup (40g tamarind soaked in 1 Cup water)
Prepare Kaleji (Mutton Liver): 00:49
-Mutton kaleji (Mutton Liver) cubes kg
-Sirka (Vinegar) 2 tbs
-Adrak lehsan (Ginger garlic) crushed 2 tbs
-Zeera (Cumin seeds) roasted & crushed 1 tbs
-Sabut dhania (Coriander seeds) roasted & crushed 1 & tbs
-Garam masala powder 1 tsp
-Lal mirch (Red chilli) crushed tbs
-Haldi powder (Turmeric powder) tsp
-Lal mirch powder (Red chilli powder) tbs or to taste
-Dahi (Yogurt) 3 tbs
-Namak (Salt) tbs or to taste
-Cooking oil Cup
-Pyaz (Onion) sliced 1 large
-Hara dhania (Fresh coriander) chopped 2-3 tbs
Assembling: 02:12
-Buns
-Bun kabab chutney
-Cooked mutton liver
-Pyaz (Onion) rings
-Bun kabab chutney
-Cooking oil 1 tsp

Directions:
Prepare Bun Kabab Chutney: 00:19
-In a chopper,add garlic,green chillies,button red chillies,fresh coriander leaves,mint leaves,cumin seeds, salt & blend well.
-Add tamarind water,blend again & set aside.
Prepare Kaleji (Mutton Liver): 00:49
-In a bowl,add mutton liver,vinegar & mix well.
-Ad ginger garlic,cumin seeds,coriander seeds,garam masala powder,red chilli crushed,turmeric powder, red chilli powder,yogurt,salt & mix well,cover & marinate for 30 minutes.
-On a griddle,add cooking oil,onion & fry until light golden.
-Now add marinated liver,mix well & cook on medium flame for 10-12 minutes.
-Add fresh coriander,mix well & cook for 6-8 minutes.
Assembling: 02:12
-Now move the cooked liver at one side of griddle.
-Cut bun from the center and toast on heated griddle from both sides with cooking oil.
-On one side of bun,add bun kabab chutney,cooked mutton liver and onion rings.
-On top side of bun,add & spread bun kabab chutney and flip to make a bun kabab (makes 5-6).
-Add cooking oil and toast bun kabab from both sides.
-Serve kaleji bun kabab with onion and bun kabab chutney.

Prepare Bun Kabab Chutney: 00:19
-Chopper mein lehsan,hari mirchein,sabut lal mirhc,hara dhania,podina,zeera aur namak dal ker ache tarhan blend ker lein.
Prepare Kaleji (Mutton Liver): 00:49
-Imli ka pani dal ker dubara ache tarhan blend karein & side per rakh dein.
-Bowl mein mutton kaleji aur sirka dal ker ache tarhan mix ker lein.
-Adrak lehsan,zeera,sabut dhania,garam masala powder,lal mirch crushed,haldi powder,lal mirch powder,dahi aur namak dal ker ache tarhan mix karein aur dhak ker 30 minutes kliya marinate ker lein.
-Tawa per cooking oil aur pyaz dal dein aur light golden hunay tak fry ker lein.
-Ab marinated kaleji dal ker ache tarhan mix karein aur darmiyani ancch per 10-12 minutes kliya paka lein.
-Hara dhania dal ker ache tarhan mix karein aur 6-8 minutes kliya paka lein.
Assembling: 02:12
-Ab cooked kaleji ko tawa ki ek side per ker dein.
-Bun ko bech mein sa cut karein aur garam taway per dono sides sa cooking oil dal ker toast ker lein.
-Bun ki ek side per bun kabab chutney,cooked mutton kaleji aur pyaz rings dal dein.
-Bun ki top side per bun kabab chutney dal ker pheela lein aur flip ker ka bun kabab tayyar ker lein (makes 5-6).
-Cooking oil dal ker bun kabab ko dono sides sa toast ker lein.
-Kaleji bun kabab ko pyaz aur bun kabab chutney ka saath serve karein!
