Kanki Nu Kichu | Sanjeev Kapoor Khazana

Broken rice cooked in spicy paste tempered with ghee. Popular gujarati recipe.

KANKI NU KICHIU

Ingredients

1 cup broken rice (chawal ki kanki), soaked
2 green chillies
6-8 curry leaves
½ cup fresh mint leaves
1 tablespoon ghee + for serving
1 tablespoon white sesame seeds
½ teaspoon chilli flakes
Salt to taste

Method

1. Grind green chillies, curry leaves and mint leaves into a fine paste.
2. Heat ghee in a non-stick pan. Add broken rice and mix well. Add sesame seeds, red chilli flakes, ground paste and mix well. Add 1 cup water and mix well.
3. Add salt and mix. Cook for 15-20 minutes or till rice is well done adding more water if necessary. Switch off heat.
4. Drizzle ghee on top. Serve hot.

Preparation Time: 8-10 minutes
Cooking Time: 15-20 minutes
