Popular gujarati recipe.KANKI NU KICHIUIngredients1 cup broken rice (chawal ki kanki), soaked 2 green chillies6-8 curry leaves½ cup fresh mint leaves 1 tablespoon ghee + for serving 1 tablespoon white sesame seeds½ teaspoon chilli flakesSalt to tasteMethod1. Grind green chillies, curry leaves and mint leaves into a fine paste.2. Heat ghee in a non-stick pan. Add broken rice and mix well. Add sesame seeds, red chilli flakes, ground paste and mix well. Add 1 cup water and mix well. 3. Add salt and mix. Cook for 15-20 minutes or till rice is well done adding more water if necessary. Switch off heat.4. Drizzle ghee on top.
