Pair this achar with your everyday meals and add that extra zing to them.KARELE KA ACHAARIngredients3 medium bitter gourds (karele)Salt to taste4 tbsps fennel seeds1 tsp fenugreek seeds¼ tsp carom seeds (ajwain)3 tbsps yellow mustard seeds½ tsp asafoetida½ tbsp black peppercorns½ cup mustard oil½ tsp turmeric powder2 tsps red chilli powderBlack salt to taste1 tsp onion seeds (kalaunji)2 tbsps vinegarMethod1. Cut bitter gourds into thick slices and remove the seeds. Apply salt and set aside for 1 hour.2. Heat a nonstick pan. Dry roast fennel seeds, fenugreek seeds, carom seeds for a minute.3. Add mustard seeds, asafoetida and black peppercorns and sauté for a few seconds.4. Transfer in a plate and allow to cool. Transfer in a blender jar and grind coarsely. 5. Squeeze out the water, arrange the bitter gourd slices on a muslin cloth and sun dry for 1 hour.6. Heat mustard oil in a nonstick pan. Once it starts to smoke, lower the heat, add turmeric powder, 2 tbsps prepared spice mix, red chilli powder, black salt, salt, onion seeds and mix well.7. Add bitter gourd slices and sauté for 2 minutes. Add vinegar and mix well.8. Allow to cool, transfer in air tight jar and set aside for 2 days.9.
