Kashmiri Dhaniwal Korma | Gosht Dhaniya Korma | Mutton Cilantro Korma | Wazwan Series | Kashmiri Tadka Twist

Dhaniwal Korma is a part of Kashmiri cuisine Wazwan. its easy to make, the process involves braising meat with yogurt and stock and thereby infusing the coriander flavors and aroma into the gravy and meat. The rest of the flavors are based on the mixture of spices like cumin, cardamom, cinnamon, garlic etc. Gosht Dhaniya Korma is similar to 'Yogurt Yakhni' in many ways but the only difference is that we add a hint of turmeric powder in Daniwal Korma and also use Coriander leaves to infuse the aroma instead of the mint leaves (which are used in the Yakhni). In this video we tried to present the easy method for making the Daniwal Korma. Give it a try and let us know in the comments how it turned out.

Recipe :

Ingredients:

For Stock Preparation:

1. Mutton (Lamb or Goat) - 2lb (~1kg)
2. Salt - 1/2 tbsp
3. Water - ~ 1 litre

For Yogurt gravy Preparation:


1. Curd/Plain Yougurt - 1 litre

For Korma:

1. Onion - 1 - medium - (Finely chopped)
2. Coriander/Cilantro - 1 Bunch - Finely chopped
3. Turmeric Pdr - 1 tsp
4. Salt - 1/2 tbsp or as per taste
5. Ginger Garlic Paste - 1 tbsp
6. Ginger Pdr - 1 tbsp
7. Coriander Pdr - 1 tbsp
8. Fennel Pdr - 1 tbsp
9. Cumin Seeds - 1 tbsp
10.Cinnamon - 2 sticks
11. Green Cardamom - 6
12. Black Cardamom - 1
13. Peeled Garlic Cloves - 3
14. Ghee - 3 tbsp
15 Oil - 5-6 tbsp

Method:

Stock:

1.In a pressure cooker, add meat and water (Over the meat level)
2. Add Salt - 1/2 tbsp
3. Cook for 2-3 whistles (May depend on the type (hardness of your meat).
4. Keep Aside

Yogurt Gravy:

1. On high heat, cook yogurt in a heavy bottom vessel
2. Keep stirring continuously to avoid the curdling of the yogurt (very Important step)
3. After the curd/yogurt starts to boil, reduce the heat to low and keep stirring.
4. After 15-20 mins, the curd will reduce a bit and become thick
5. Turn-off the heat and let it cool. Keep Aside

Actual Korma:

1. In a utensil, heat ghee and oil together
2. Fry onions until golden brown
3. Now add cumin seeds (We did not add spices in stock, because when you add these to oil the

spices tend to emit the aroma in oil which gives a fabulous aroma to gravy)
4. Saute
5. Now add meat (sans stock) and all the spices one by one and keep stirring.
6. Saute 1 min
7. At this stage add the yogurt gravy which we prepared earlier and Mix Well.
8. Now add the chopped coriander and mix
9. You can also add all or some of the stock
10. Cover and cook for about 20 - 25 mins on Medium heat.
11. When meat tender and 1/4th water is reduced, Danial Korma is ready.
