If you want to add a tasty twist to the popular baingan bharta, try chicken minceKEEMA AUR BAINGAN KA BHARTAIngredients1 large bharta brinjal3 medium onions, chopped2 inch ginger piece3 medium tomatoes4 tbsps oil¾ tsp cumin seedsSalt to taste¾ tsp red chilli powder200 gms chicken mince (keema)2-3 fresh coriander sprigs½ tsp garam masala powderMethod1. Roast the brinjal on direct flame till the skin gets charred and the brinjal gets well cooked.2. Finely chop onions, ginger and tomatoes.3. When the brinjal is ready, soak it in a bowl of cold water. 4. Heat 2 tbsps oil in a non-stick pan, add cumin seeds and saute till their colour changes. Add onions, ginger and tomatoes and saute. 5. Peel off the charred skin of the brinjal and roughly chop. Add the brinjal to the pan. If you wish you can add the brinjal stem too. Mix and saute for a few minutes.6. Add salt and red chilli powder and mix.7. Heat 2 tbsps oil in another non-stick pan, add chicken mince and mix pressing lightly so that the mince lumps break. Add salt and mix and saute for a few minutes or till the colour of the mince becomes light.8. Add half the brinjal mixture and mix. Cover and cook till chicken gets cooked.9. Roughly chop coriander leaves and add to the 1st pan and mix.10. Add garam masala powder to the pan with the chicken and mix well. 11.
