Keihan Recipe (Chicken Soup over Rice with Fried Egg and Shiitake Mushrooms) | Cooking with Dog

Keihan is chicken soup over rice with various toppings, and it is a local dish in Amami Oshima, Kagoshima Prefecture. The chicken broth is so delicious and the toppings will delight your taste buds!

1 Chicken Breast, skinless
600ml Water (2.54 cups)
Green part of a Long Green Onion
3 slices of Ginger Root
2 tbsp Sake
1/2 tsp Salt

3 Shiitake Fukumeni, rehydrated mushrooms simmered in broth

A pinch of Salt

3 Spring Onion Leaves, chopped
Toasted Nori Seaweed, shredded
Yuzukosho, yuzu citrus chili paste, optional

A dash of Soy Sauce
Salt
Fresh Steamed Rice

* 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml
