Koose/ Akara (Beans Cake)

INGREDIENTS

1 cup black eyed beans
3 Chili peppers
1 small size onion(chopped)
3 eggs
Oil
1tbs salt

PREPARATION

1. Soak beans overnight.
2. Rinse and skin the beans by rubbing between your fingers to remove skin and black eye.
3.Blend beans, chili peppers and onions together.
4. Pour mixture into a bowl, add salt, eggs and stir.
5. Heat oil in a pan and carefully scoop small size of the mixture into the oil.
6. Fry until golden brown
7. Drain excess oil on paper towel
8. Serve hot or cold.
9. Enjoy.
