Ingredients for Boiled Lentil:
Water as required
Brown lentils 1 cup
Salt 1 ½ tsp

Ingredients for Boiled Macaroni:
Water as required
Salt 1 tsp
Oil 2 tbsp.
Elbow macaroni 1 cup

Ingredients for Lentil Rice:
Brown lentils (boiled)
Oil 3 tbsp.
Guard Basmati Rice (soaked) 2 cups
Salt 1 ½ tsp
Black pepper powder 1 tsp
Coriander powder 1 tsp
Water 3 cups

Ingredients for Tomato Sauce:
Oil 2 tbsp.
Onion (grated) 1/4 cup
Garlic (minced) 1 tbsp.
Tomato puree 2 cups
Salt 1/2 tsp / to taste
Black pepper powder 1/2 tsp
Coriander powder 1 tsp
Red chili flakes 1 tsp
Vinegar 2-3 tbsp.

Ingredients for Assembling:
Koshari rice as required
Boiled macaroni as required
Brown lentil (boiled) as required
Boiled chickpeas as required
Tomato sauce as required
Fried onion as required

Directions for Boiled Lentil Preparation:
1. In a pot heat water and add salt. Bring it to boil. Now add soaked brown lentil and cook until half done. Strain and set aside.
Directions for Boiled macaroni Preparation:
2. In a pot heat water, add salt, oil and bring it to boil. Add macaroni and boil until fully done. Strain and set aside.
Directions for koshari Rice Preparation:
3. In a bowl add water and Guard Basmati Rice for 25-30 minutes.
4. In a pot heat oil and fry soaked rice. Add salt, black pepper, coriander powder and cook for 3 minutes while stirring continuously.
5. Add warm water and give it a good mix. Bring it to boil on high flame. Reduce the flame and let cook until 80% water dries out.
6. Cover with lid and steam on low flame for 10-12 minutes.
7. Your koshari rice is ready to serve.
Directions for Tomato Sauce Preparation:
8. In a pan heat oil and sauté onion until translucent. Add garlic and cook for a minute.
9. Add tomato puree, red chili flakes, coriander powder, salt, black pepper and cook until starts to thicken. Add vinegar and cook for another 2 minutes.
10. Your tomato sauce is ready to serve. Keep warm until used.
Directions for Assembling:
11. In a dish, make a bed of koshari, top it with boiled brown lentil, macaroni, and chickpeas. Add some tomato sauce and lastly garnish with some fried onion.
12. Your Egyptian Koshari is ready to serve.
