Kottayam Style Mutton Roast Sanjeev Kapoor Khazana

Tender meat cooked in spices with curry leaves and sauted with coconut adding their unique taste is how mutton is cooked in the quaint town of Kottayam.

KOTTAYAM STYLE MUTTON ROAST

Ingredients

750 grams boneless mutton, cut into 2 inch pieces
2-3 green chillies, diagonally sliced
10-12 garlic cloves, vertically sliced
2 tbsps finely chopped ginger
1 tsp fennel (saunf) powder
1 tsp black pepper powder
1 tsp red chilli powder
tsp turmeric powder
1 tsp garam masala powder
Salt to taste
1 lemon, halved
2 large onions, thinly sliced
1 sprig of curry leaves
3 tbsps oil
2 tbsps chopped fresh coconut
Onion slices to serve
Lemon slices to serve

Method

1. Put the mutton in a pressure cooker, add green chillies, garlic, ginger, fennel powder, black pepper powder, red chilli powder, turmeric powder, garam masala powder, salt, squeeze the juice of lemon and add the onions, and curry leaves and mix till the mutton pieces are well coated with the masala. Place the cooker on medium heat, add cup water, mix, cover and cook under pressure for 4-5 whistles.
2. Open the cooker once the pressure has reduced completely.
3. Heat oil in a shallow pan. Add coconut and mix well. Cook till it turns golden.
4. Add the mutton into the pan and mix well. Cook on high heat till the mixture becomes dry.
5. Transfer the mutton roast into a serving plate, garnish with fried curry leaves and serve hot with onion rings and lemon slices.
