Hi everyone, today we are making a signature dish of Sichuan cuisine, La ziji, the Chinese version of spicy popcorn chicken. As always, this dish is simple and tasty.

The chicken is crispy on the outside, tender and juicy in the inside, and very well-spiced. You can taste different blends of spiciness from hot chilli pepper, numbing Sichuan pepper, piercing black pepper, aromatic garlic and green onion, with a hint of sweetness.

Ingredients consist of the meat, marinade, and spices.

MEAT 肉:
- 4 Chicken Thighs or Drumsticks 4只鸡腿

MARINADE 腌料:
- 10g Corn Starch 10克生粉
- 2tbsp Shaoxing Cooking Wine 2汤匙绍兴料酒
- 3tbsp Soy Sauce 3汤匙生抽
- 1 Egg 1个蛋
- 2g Salt 2克盐
- 3g Black Pepper 3克黑胡椒
- 2tbsp Oil 2汤匙油
- 7g Ginger 7克生姜

SPICES 调味料:
- 35g Dried Chili Pepper 35克干辣椒
- 10g Sichuan Pepper 10克花椒
- 10g Garlic 10克大蒜
- 10g Green Onion 10克小葱
- 8g Ginger 8克生姜
- 2g Sugar 2克糖
- 5g Sesame 5克芝麻
