Lapsi aur Shimla Mirch Salad Sanjeev Kapoor Khazana

A crunchy salad with smoked and raw veggies Simple lapsi with a delightful pop of red/yellow bell peppers, the freshness of mint and a drizzle of a citrusy dressing.

LAPSI AUR SHIMLA MIRCH SALAD

Ingredients

1 cups-soaked broken wheat (lapsi)
1 large red capsicum (lal shimla mirch)
1 large yellow capsicum (pili shimla mirch)
1 medium onion, sliced
2 medium tomatoes, seeded and diced
1 tbsp chopped fresh coriander leaves
Salt to taste
White pepper powder to taste
A pinch of sugar
1 tbsp lemon juice
4 tbsps finely chopped fresh mint leaves
A few leaves of iceberg lettuce

Method

1. Roast each capsicum over direct flame till well charred from all sides. Set aside to cool.
2. Add the soaked broken wheat, onion, tomatoes, coriander leaves, salt, white pepper, and sugar, lemon juice, mint leaves and mix till well combined.
3. Peel the charred capsicums and cut into small pieces and add to the bowl.
4. Tear the iceberg lettuce leaves and add into the salad bowl and toss well. Serve.
