Lauki Ke Pakode Monsoon Special Sanjeev Kapoor Khazana

The humble lauki (bottle gourd), cut into thin roundels, coated with a mildy spiced pakoda batter and deep fried till nice and scrumptious! Always, always the best with green chutney.

LAUKI KE PAKODE

Ingredients

1 medium bottle gourd
1 cup gram flour (besan)
2 tbsps rice flour
tsp turmeric powder
tsp red chilli powder
Salt to taste
tsp carom seeds (ajwain)
1 tsp ginger-garlic green chilli paste
1 tbsp chopped fresh coriander leaves
Oil for deep frying
Green chutney to serve

Method

1. Peel the bottle gourd and cut into thin roundels,
2. In a bowl add gram flour, rice flour, turmeric powder, red chilli powder, salt to taste and ajwain, ginger-garlic green chilli paste, chopped coriander leaves, gradually add cup water and mix till well combined. Continue to mix for 3-4 minutes.
3. Heat sufficient oil in a kadai, dip the roundels in the batter and gently slide into the hot oil. Deep fry till golden brown and crisp. Drain on an absorbent pepper.
4. Serve hot with green chutney.
