LEMON POSSETS

Ingredients

2 lemons
1 cup fresh cream
ΒΌ cup castor sugar

Method

1. Heat cream in a non-stick pan and bring to boil. Add sugar, mix and cook on low heat for 2-3 minutes. Remove from heat and cool.
2. Slice, add juice of 1 lemon to cream mixture and mix well. Grate in the remaining lemon to get the zest and mix well.
3. Pour the lemon-cream mixture into shot glasses and refrigerate for 3-4 hours or till set.
4. Serve garnished with some lemon zest.
