1 cup (200 grams) sugar

1 teaspoon vanilla essence or vanilla extract

4 eggs

Zest of 1 lemon

2 cups (260 grams) all purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

1/4 cup (60 ml) fresh lemon juice

Lemon Frosting:

1 cup (115 grams) confectioners' (powdered or icing) sugar

2 - 4 tablespoons fresh lemon juice
