Lemon Rasam


Lemon rasam is very popular in Tamil brahmin cuisines. It is healthy, tasty & quick since it requires very basic ingredients to make it.
Tamarind is not needed to make this rasam as the lemon juice gives the sourness. It can be served as a soup or can be mixed with rice.


Ingredients:
Toordal-1/4 cup
Turmeric powder-1/2 teaspoon
Salt-3/4 teaspoon
Cumin seeds- 1 teaspoon
Green chillies-4
Curry leaves- few
Tomatoes-2
Coriander leaves- for garnishing
Lemon juice- 4 tablespoons

Tadka:
Oil/Ghee- 2 teaspoon
Mustard seeds-1/2 teaspoon
Hing-1/4 teaspoon


Directions:

1. Pressure cook 1/4 cup toordal with 2 cups of water for 4 whistles. Strain the water and save it .
2. Take about 2.5 cups of dal water. Add turmeric powder, salt, cumin seeds, green chillies , curry leaves and tomatoes.
3. Cook it on medium flame until the tomatoes are soft.
4. Add 1/2 cup water and keep it on low flame until froth forms on top. Garnish with coriander leaves and switch off the flame.
5. Heat 2 tsp oil/ghee. Add 1/2 tsp mustard seeds . Let them splutter. Add 1/4 tsp hing and switch off the flame. Add this tadka to the rasam.
6. Add 4 tablespoons of lemon juice to the rasam. ( adjust the quantity of lemon juice according to your taste).
