Cauliflower Bites Recipe (cauliflower buffalo wings)
Ingredients:
1 head of cauliflower, organic, rinsed and cut into florets, then into 1 inch pieces

Batter:
cup gluten free flour, I use Bobs Red Mill 1 to 1 baking flour
cup unsweetened almond milk plus more to adjust thickness of batter
tsp smoked paprika
tsp. Ancho chile powder
1 tsp. Garlic powder
tsp salt, I use Real Salt

Panko Crumbs:
cup panko crumbs, I use Aleais brand

BBQ Sauce:
cup Primal Kitchen Classic BBQ Sauce
1 to 2 tsp. Maple syrup, the real stuff
1 tsp fresh lemon juice

Directions:
Preheat oven to 425 degrees F.

In a medium bowl place the flour, almond milk, smoked paprika, ancho chile powder, garlic powder, salt and whisk until combined. The batter should be the consistency of thick pancake batter. Add more almond milk to thin the batter to the desired consistency.

In a medium plate, combine the panko crumbs and the Italian seasoning. Stir to combine.

In a small bowl, combine the bbq sauce, maple syrup and the lemon juice.

Toss some of the cauliflower into the batter bowl and coat each piece. You will find this the messy part! Take one piece of cauliflower at a time and make sure it is completely covered in batter. Then place this piece into the panko crumbs and roll it around and push the crumbs into the ball so they stick. Gently shake any excess crumbs off. Place each cauliflower bite onto a parchment paper covered baking sheet.

Leave space between each bite and place in the oven at 425 degrees F. for about 12 minutes. Take them out of the oven and turn them over using tongs.

Place them back in the oven for an additional 12 minutes or so. They should be a golden brown.

Now this time using a pastry brush, coat the bites completely with the bbq sauce and place them back on the baking sheet. In the video I pushed the burnt crumbs off to the side before coating.

Bake one last time for somewhere between 10 and 15 minutes.
