French fries topped with spicy chicken mince mixture, salsa and cheese sauce.

LOADED KEEMA FRIES

Ingredients

250 grams boneless chicken mince (keema)
3 cups French fries, frozen
3-4 tablespoons oil + for deep-frying
6-7 black peppercorns
4 cloves
1 tablespoon cumin seeds (jeera)
2-3 green cardamoms
1 bay leaf
2-3 green chillies, finely chopped
1 large onion, finely chopped
1 tablespoon ginger-garlic paste
1 large tomato, finely chopped
1 tablespoon red chilli powder
¼ teaspoon turmeric powder
1 tablespoon cumin-coriander powder
Salt to taste
2 tablespoons chopped fresh coriander leaves
6-8 fresh mint sprigs
Crushed black peppercorns to taste
1 teaspoon garam masala powder + for sprinkling
1 teaspoon lemon juice
Chopped fresh mint leaves for garnishing
Salsa
1 medium onion, finely chopped
1 medium tomato, finely chopped
1-2 green chillies, finely chopped
2 teaspoons lemon juice
1 tablespoon chopped fresh coriander leaves
1 tablespoon chopped fresh mint leaves
Salt to taste
Cheese sauce
2 tablespoons grated mozzarella cheese
2 tablespoons grated cheddar cheese
1 tablespoon butter
2 garlic cloves, finely chopped
1 tablespoon refined flour (maida)
1 cup milk
Crushed black peppercorns to taste
Salt to taste

Method

1. Heat 3-4 tablespoons oil in a non-stick pan. Add peppercorns, cloves, cumin seeds, cardamoms, bay leaf and saute till fragrant. Add half the green chillies and mix. Add onions and saute till golden brown.
2. Add ginger-garlic paste, mix and sauté till the raw flavour goes away. Add tomatoes, mix and cook till tomatoes turn soft and pulpy.
3. Add chilli powder, turmeric powder, cumin-coriander powder, mix and till the oil separates. Add salt and mix well.
4. Heat sufficient oil in a kadai.
5. Add chicken mince to the pan, mix and cook for a minute. Add little water and mix. Add salt and mix. Add 1 tablespoon coriander leaves.
6. Finely chop half the mint sprigs and add to the chicken mixture. Mix well and cook for 5-10 minutes or till the chicken is fully done.
7. Deep-fry the French fries in the hot oil till golden-brown. Drain on absorbent paper, sprinkle salt and crushed peppercorns, toss well and set aside.
8. To make salsa, mix together onions, tomatoes, green chillies, lemon juice, coriander leaves and mint leaves in a bowl. Refrigerate to chill.
9. To make cheese sauce, heat butter in another non-stick pan. Add garlic and sauté for a few seconds. Add flour, mix and and cook for 1-2 minutes, stirring continuously. Keep whisking, add milk little by little and bring the mixture to a boil.
10. Remove chicken mixture from heat. Roughly chop remaining mint sprigs and add to the chicken mixture with the remaining coriander leaves. Add 1 teaspoon garam masala powder, lemon juice and mix well.
11. Add mozzarella cheese and cheddar cheese to the sauce, mix well and cook for 1-2 minutes, stirring continuously. Add crushed peppercorn, salt and mix. Remove from heat and set aside.
12. Transfer the French fries on a serving platter. Top with the prepared chicken mixture and pour cheese sauce over it.
13. Add salt to the salsa and mix well.
14. Add salsa over the fries and sprinkle some garam masala powder on top. Garnish with fresh mint leaves and serve immediately.
