French fries topped with spicy chicken mince mixture, salsa and cheese sauce.LOADED KEEMA FRIESIngredients250 grams boneless chicken mince (keema)3 cups French fries, frozen3-4 tablespoons oil + for deep-frying6-7 black peppercorns4 cloves1 tablespoon cumin seeds (jeera)2-3 green cardamoms 1 bay leaf2-3 green chillies, finely chopped1 large onion, finely chopped1 tablespoon ginger-garlic paste1 large tomato, finely chopped1 tablespoon red chilli powder¼ teaspoon turmeric powder1 tablespoon cumin-coriander powderSalt to taste2 tablespoons chopped fresh coriander leaves6-8 fresh mint sprigs Crushed black peppercorns to taste1 teaspoon garam masala powder + for sprinkling1 teaspoon lemon juiceChopped fresh mint leaves for garnishingSalsa1 medium onion, finely chopped1 medium tomato, finely chopped1-2 green chillies, finely chopped2 teaspoons lemon juice1 tablespoon chopped fresh coriander leaves1 tablespoon chopped fresh mint leavesSalt to tasteCheese sauce2 tablespoons grated mozzarella cheese2 tablespoons grated cheddar cheese1 tablespoon butter2 garlic cloves, finely chopped1 tablespoon refined flour (maida)1 cup milkCrushed black peppercorns to tasteSalt to tasteMethod1. Heat 3-4 tablespoons oil in a non-stick pan. Add peppercorns, cloves, cumin seeds, cardamoms, bay leaf and saute till fragrant. Add half the green chillies and mix. Add onions and saute till golden brown. 2. Add ginger-garlic paste, mix and sauté till the raw flavour goes away. Add tomatoes, mix and cook till tomatoes turn soft and pulpy. 3. Add chilli powder, turmeric powder, cumin-coriander powder, mix and till the oil separates. Add salt and mix well. 4. Heat sufficient oil in a kadai. 5. Add chicken mince to the pan, mix and cook for a minute. Add little water and mix. Add salt and mix. Add 1 tablespoon coriander leaves. 6. Finely chop half the mint sprigs and add to the chicken mixture. Mix well and cook for 5-10 minutes or till the chicken is fully done. 7. Deep-fry the French fries in the hot oil till golden-brown. Drain on absorbent paper, sprinkle salt and crushed peppercorns, toss well and set aside. 8. To make salsa, mix together onions, tomatoes, green chillies, lemon juice, coriander leaves and mint leaves in a bowl. Refrigerate to chill. 9. To make cheese sauce, heat butter in another non-stick pan. Add garlic and sauté for a few seconds. Add flour, mix and and cook for 1-2 minutes, stirring continuously. Keep whisking, add milk little by little and bring the mixture to a boil. 10. Remove chicken mixture from heat. Roughly chop remaining mint sprigs and add to the chicken mixture with the remaining coriander leaves. Add 1 teaspoon garam masala powder, lemon juice and mix well. 11. Add mozzarella cheese and cheddar cheese to the sauce, mix well and cook for 1-2 minutes, stirring continuously. Add crushed peppercorn, salt and mix. Remove from heat and set aside. 12. Transfer the French fries on a serving platter. Top with the prepared chicken mixture and pour cheese sauce over it. 13. Add salt to the salsa and mix well. 14. Add salsa over the fries and sprinkle some garam masala powder on top. Garnish with fresh mint leaves and serve immediately.
