Take a fork and poke holes into the sweet potatoes so they dont explode when cooking.Rub a light coating of olive oil over the potatoes and place them on a foil lined baking sheet. Bake them in the oven for about 50 minutes or until they are fork tender.While they are baking, make the yogurt lime sauce. Place the yogurt in a food processor along with the mango and juice from lime. Blend until the mixture is smooth and creamy. Set aside.Cook the bacon until crispy and then crumble or chop it into small pieces.Place the broccoli into a steamer and cook until just fork tender, about 3 minutes. You dont want this to turn mushy.After the sweet potatoes are done, let them cool for a good 5 minutes so you can handle them. Make a slit down the top of each potato and give it a squeeze so the potato opens up a bit. Scoop out most of the flesh and place it into a medium size bowl leaving some potato in the skin so it holds its shape.Now lets load it up:Add the cinnamon, pecans, bacon, chives, parsley, salt, and the caramelized onion and give this a good mix until everything is evenly combined.Next add some of the broccoli and stir to incorporate.Add this mixture back to the skins and top the potatoes with a sprinkle more of pecans, bacon and broccoli.Finish this off with a nice drizzle of the yogurt, mango lime sauce and enjoy!If you want to reheat these loaded potatoes, just place them on a baking sheet in a 350 degree F. oven for 15 minutes or until hot.Yogurt, Mango, Lime SauceIngredients:1 cup Greek plain yogurt1 mango, skin and seed removed fresh lime, juicedDirections:Place above ingredients in a food processor until smooth and creamy.Thanks for watching and sharing!Rockin RobinP.S.
