Believe me it's filling! The bacon, avocado, and caramelized onion make for incredible flavor!And did I mention to use butter? Don't use anything else (including olive oil, coconut oil or margarine.) You get the best flavor with butter.Here are more of my Mexican recipes, check it out: https://www.youtube.com/playlist?list=PL553F14121DBB9587Mac and cheese QuesadillasIngredients for 1 quesadilla:1 - 1 1/2 cup macaroni and cheese, warmed if using left overs3 slices bacon, cooked and broken into pieces, preferably with no nitrites1 cup of grated cheddar cheese 1/3 cup yellow onion, chopped1/2 avocado, sliced2 flour tortillas1 Tbsp. organic butter, only use real butter!2 tsp. olive oilDirections:Make sure the mac and cheese is warm before placing in the quesadilla. It will be difficult to get it warm enough simply cooking it for a few minutes in the quesadilla.Let's cook the bacon first. Place it flat and spread out in a large frying pan over medium heat. Turn the pieces of bacon over frequently until they are brown and crispy.Remove the bacon from the pan and place it on a paper towel covered plate and set aside.Use another pan or clean out the one used to cook the bacon and add 2 tsp. of olive oil over medium heat. Add the onion and saut for 8 to 10 minutes until the onion is golden brown and caramelized a bit. Place the onion in a dish.Now to put it all together.Take one flour tortilla and place about 1/2 cup or more grated cheese and spread it out on the tortilla. Then add a layer of the mac and cheese.Add the bacon on top by breaking it up into bite size pieces. Then add the caramelized onion and the green chile.The next layer is avocado slices and finally the rest of the cheddar cheese. Place the other tortilla on top and take the quesadilla over to the stove to cook it up.Heat a frying pan over low heat and place 1 or 2 tsp. of butter on the pan. Spread the butter around the pan and set the quesadilla on top of it.Cook on low to medium low to give the cheese in the quesadilla a chance to melt and hold all the ingredients together when you flip it over.Spread more butter on top of the quesadilla and once it is golden brown, flip it over and cook the second side.When it's done, serve it up on a plate and cut into wedges.
