Pan Seared Salmon With Lemon Garlic Butter Sauce
Ingredients:
4 salmon fillets, lb each
4 Tbsp. Kerrygold butter
4 cloves garlic, finely chopped
1 organic lemon, zested and juiced
1 tsp. Italian seasoning
Olive oil
Salt
Pepper
Parsley for garnish

Mashed potatoes:
6-8 organic gold potatoes, peeled and cut in half
cup whole milk
2 Tbsp. kerrygold butter, combine the milk and butter and microwave to warm
Salt
pepper

Directions:

Place the peeled and cut potatoes in a pot of water and bring to a boil with a lid. Boil for about 10 minutes and check for doneness with a fork. They should be fork tender. Drain and place back in the pan or a bowl. Add heated milk and butter a little at a time. Mash and season with salt and pepper. Cover to keep warm.

Pat the salmon dry with paper towels. Drizzle olive oil over all sides and then season with salt, pepper, and Italian seasoning.

Preheat a frying pan over medium high heat. Add 1 Tbs. olive oil to the pan and swirl. Lay the salmon skin side up and lower the temperature to medium. Don't move the filets once they are in the pan. Cook for 2 to 3 minutes and then check for golden brown and then flip the salmon over.

Cook the salmon another 2 to 3 minutes depending on how thick the fish is. If you use an instant read thermometer, it should read at least 120 degrees F. Don't overcook the salmon. Even though the sockeye in the video reached 140F it did not dry out. Keep the temperature 120 to 135 F. for best results.

Set the filets on a plate to keep warm while we make the lemon butter garlic sauce. In the same frying pan add the butter and garlic. Stir and make sure it doesn't burn. In the video I took the pan off the heat as I didn't want to burn the garlic. Then add the lemon zest, juice and stir. Add the salmon back to the pan to reheat and spoon the garlic sauce over the fish.

To serve this, place mashed potatoes on a dish and top with a salmon filet and then spoon sauce over all and garnish with chopped parsley. Enjoy!
