INGREDIENTS:

For Eggless Rasmalai Cake
1 cup curd
1 & 1/4 teaspoon baking powder
1/2 teaspoon baking soda
1 & 1/2 cup all-purpose flour
1 teaspoon cardamom powder + 2 pinches for syrup
1/2 cup any flavourless oil
1/4 teaspoon vanilla extract
1/4 teaspoon rabdi flavour (optional) + few drops for syrup
100-150 ml condensed milk
150 ml cream
150 ml full-fat milk
5-6 strands saffron
2 tablespoons cashew nuts (chopped)
2 tablespoons pistachios (chopped)
2 tablespoons slivered almonds
2-3 tablespoons dried rose petals

For Eggless Gulab Jamun Cake
1 & 3/4 cup milk
1 & 3/4 tablespoons vinegar/lemon juice
1 & 1/2 cup + 1 tablespoon all-purpose flour
1/4 cup milk powder
1/4 cup semolina
20-gram cornflour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup caster sugar
1 teaspoon cardamom powder
5-6 strands saffron
1 teaspoon rose water
1/2 teaspoon kesar gulab extract
1/2 cup any flavourless oil
For syrup:
80-gram sugar
50 ml water
1 teaspoon lemon juice
1 teaspoon rose water
2 pinches cardamom powder
1/4 teaspoon kesar gulab extract
some pistachios & rose leaves for decoration
