MALVANI CHICKENIngredient 750 grams chicken, cut into 2 inch pieces on the bone1 tbsp ginger-garlic-fresh coriander paste¼ tsp turmeric powderSalt to taste 3 tbsp oil½ inch ginger pieces, sliced2-3 garlic cloves2 medium onions, sliced½ cup grated dried coconut 2 bay leaves1 large onion, finely chopped1 tbsp red chilli powderSalt to tasteFresh coriander sprig for garnishKombdi vade to serveSalad to serveMethod1. Combine together chicken, ginger-garlic-fresh coriander paste, turmeric powder, salt in a bowl and set aside for 30 minutes.2. Heat 1 tbsp oil in kadai, add ginger pieces, garlic cloves, onion and sauté till golden brown. Transfer them on a plate and allow to cool slightly.3. In the same kadai¸ add coconut and sauté till golden brown, transfer on a plate and allow to cool slightly.4. In a blender jar, add the onion mixture and coconut and add ¼ cup water. Blend to a fine paste.5. Heat 1 tbsp oil in a deep pan, add bay leaves and onion and sauté till translucent. Add the marinated chicken pieces and sauté on high heat for 2-3 minutes. 6. Add reed chilli powder and mix well. Add the prepared paste, mix and pour 1½ cups water and stir.7. Add salt, mix, cover and cook for 10-15 minutes. Switch the heat off and transfer into a serving bowl. 8. Garnish with coriander sprig and serve hot with kombdivade and salad.
