Mango Kulfi Faluda
Recipe in English:

Ingredients:
-Aam (Mango) ½ kg
-Doodh (Milk) 1 & ½ litres
-Cheeni (Sugar) 1 Cup or to taste
-Elaichi powder (Cardamom powder) 1 tsp
-Doodh (Milk) 2 tbs
-Chawal ka atta (Rice flour) 1 & ½ tbs
-Pista (Pistachio) chopped 2-3 tbs
-Badam (Almonds) chopped 2-3 tbs
-Rose water 1 tbs
-Khoa 50 gms
-Badam (Almonds) chopped
Assembling:
-Mango cubes
-Tukh malanga (Basil seeds) soaked
-Red syrup
-Ice cubes
-Corn flour sawaiyan (Vermicelli)
-Badam (Almonds)
-Mango kulfi
-Chilled prepared milk
-Tukh malanga (Basil seeds) soaked
-Badam (Almonds)
-Mango cubes

Directions:
-Cut mango into cubes.
-In blender,add mango cubes and blend until pureed & set aside.
-In pot,add milk and bring it to boil,add sugar,cardamom powder,mix well and cook for 5 minutes.
-Take out half quantity of cooked milk in a jug,let it cool down and reserve for later use in refrigerator.
-Dissolve rice flour in milk and mix well.
-In cooked milk,add dissolve rice flour,mix well and cook on low flame for 5-6 minutes.
-Add pistachio,almonds,rose water,mix well and cook until milk thickens.
-Turn off the flame,add khoa and mix well.
-Let it cool down.
-Now add mango puree and mix well.
-Now pour the cooked milk mixture into kulfi moulds/disposable cups,add almonds and freeze for 8 hours to overnight in air tight container (makes 6).
Assembling:
-Cut mango kulfi into pieces.
-In serving glass,add mango cubes,basil seeds,red syrup,ice cubes,corn flour vermicelli,almonds,mango kulfi,chilled prepared milk,basil seeds,almonds,mango cubes & serve!

Ajza:

-Aam ko cubes mein cut ker lein.
-Blender mein aam ka cubes dal dein aur blend ker ka puree tayyar ker lein & side per rakh dein.
-Pot mein doodh dal ker ubal lein,cheeni aur elaichi powder dal ker ache tarhan mix karein aur 5 minutes kliya paka lein.
-Cooked milk ki half quantity ko alag sa jug mein nikal lein aur thanda ker lein aur bad mein use kerna kliya refrigerator mein rakh dein.
-Chawal ka atta ko doodh mein dal ker ache tarhan mix ker lein.
-Cooked milk mein dissolve chawal ka atta dal ker ache tarhan mix karein aur halki ancch per 5-6 minutes kliya paka lein.
-Pista,badam aur rose water dal ker ache tarhan mix karein aur doodh garha hunay tak paka lein.
-Chulha bund ker dein aur khoa dal ker ache tarhan mix ker lein.
-Thanda ker lein.
-Ab mango puree shamil karein aur ache tarhan mix ker lein.
-Tayyar doodh ka mixture ko kulfi moulds/disposable cups mein dal ker badam dal dein aur 8 hours ya overnight kliya air tight container mein rakh ker freeze ker lein (makes 6).
Assembling:
-Mango kulfi ko pieces mein cut ker lein.
-Serving glass mein mango cubes,tukh malanga,red syrup,ice cubes,corn flour sawaiyan,badam,mango kulfi,chilled prepared milk,tukh malanga,badam aur mango cubes dal ker serve karein.
