Mango Sev Puri

Here is a snazzy variant of the ever-popular Sev Puri, where the papdis are topped with a delightful mixture of mangoes, capsicum and tomatoes, not to forget chaat masala and a couple of other spice powders. Garnish the Mango Sev Puri with loads of crisp sev, and you are all set to surprise your family and friends with a snack they might never have tasted before. The best part is that it is very easy and quick to prepare, but very appealing, which makes it a good choice to serve at parties.

Preparation Time: 20 minutes.
Cooking Time: Nil.
Makes 18 mango sev puris.

1 cup finely chopped mangoes (Totapuri)
18 papdi
½ cup finely chopped capsicum
½ cup finely chopped tomatoes
1 tbsp chopped coriander (dhania)
½ tsp finely chopped green chillies
2 tsp chaat masala
½ tsp chilli powder
1½ tsp dried mango powder (amchur)

For the topping
Sev

For the garnish
Coriander (dhania)

1. Combine the mangoes, capsicum, tomatoes, coriander, green chillies. chaat masala, chilli powder and dried mango powder in a deep bowl and mix well.
2. Place 9 papdis on a serving plate and top each papdi with 1 tsp of the prepared mango mixture.
3. Sprinkle some sev and coriander on each papdi.
4. Repeat steps 2 and 3 to make 9 more mango sev puris.
Serve immediately.
