Mango Thokku/Raw mango pickle/Aam ka achar | Gayathiri's Cookbook

This lip smacking mango thokku is from my mom’s recipe book. We had 7 mango trees in our backyard and in our younger days , my mom used to make this pickle in bulk every summer. My siblings and I will finish it in no time, so she saves something for us at the end of summer. There are varieties of mangoes, but this mango pickle recipe will taste good with “Kilimooku” raw mango.

Store bought pickles have lots of oil, salt and preservatives which is not good for health. This freshly homemade pickle recipe is very simple and you can make it quickly.
It’s tasty, spicy and quite addictive. It goes very well with all kinds of foods.

You can store it for at least 7 days without any preservatives.

Ingredients:

Grated mango- 2 cups
Sesame oil- 3 tbsp
Mustard seeds- 1 tsp
Salt- As needed
Hing/Asafoetida- 1/4 tsp
Turmeric powder-1/2 tsp
Fenugreek powder- 3/4 tsp
Red chilli powder- 2.5 tsp

Directions:
1. Heat 2 tbsp sesame oil. Add mustard seeds and let them splutter.
2. Add hing, curry leaves, grated mango, turmeric powder and salt.
3. Saute till mango is cooked soft.It will take at least 7-10 minutes over medium flame to cook.
4. Once the mango is soft and cooked, add fenugreek powder and red chilli powder.
5. Saute till the raw taste of the chilli powder goes away.
6. Add some more oil and stir continuously. When it reduces to 1/3 of its original quantity, switch off the flame

Mango Thokku is ready!!
