These adorable Mason Jar Cheesecakes are so good, you may not be able to stop at just one. Pair with Gold Peak Raspberry Tea. RECIPE BELOW: MASON JAR CHEESECAKESINGREDIENTS: 2 cups graham cracker crumbs (16 whole graham crackers, ground)2 tbls. sugar8 tbls. butter, melted4, 8 oz pkgs cream cheese, softened3/4 cup sugar4 eggs, room temperature1 cup sour cream1 tsp vanilla extractzest of 1 lemon Topping:2 pints of fresh strawberries (sliced) and raspberries½ cup heavy cream, whipped DIRECTIONS:Preheat your oven to 325 degrees F and spray 12 (8oz) small mason jars with non-stick cooking spray, making sure to spray the bottoms so the crust doesn't stick. In a bowl crush the graham cracker crumbs and mix in 2 tbls of sugar and the melted butter. Place about 2 tbl of the mix into each mason jar and press down to make the crust In a large bowl, add the cream cheese and 3/4 cup of sugar, using a hand mixer, beat until smooth. Add eggs, vanilla, sour cream, and lemon zest and mix until well incorporated. Fill each mason jar with about 1/2 cup of the filling, leaving some room at the top for the topping. Place the jars in a large roasting pan and fill the pan with hot water halfway up the mason jars. Bake for 30 minutes, remove jars with tongs and place on a wire rack to cool. For the topping: Spoon on a dollop of whipped cream and arrange berries on top of each cheesecake.
