MATAR PURI

Ingredients :

1¼ cups fresh green pea puree
1½ cups whole wheat flour
Salt to taste
1 tbsp ginger-green chilli paste
1 tbsp oil + for drizzling + for deep frying
Sabzi to serve

Method

1. In a bowl, add whole wheat flour, salt, ginger-green chilli paste, green pea puree and mix well and add 1 tbsp oil. Knead to stiff dough and set aside for 5 minutes.
2. Divide the dough into equal portions and shape them into balls. Drizzle a little oil on a worktop. Slightly flatten the dough balls and roll each into puri.
3. Heat sufficient oil in a kadai and deep fry the puris till puffed up. Drain on an absorbent paper.
4. Serve hot with Sabzi.

SAFED ALOO

Ingredients :

4 medium potatoes, boiled and peeled
10-12 almonds, blanched and peeled
1 tbsp poppy seeds
¾ cup yogurt
½ cup mawa
Salt to taste
¼ tsp green cardamom powder
2 tbsps oil
4 bor chillies
2 tsps grated ginger
1 tbsp lemon juice
Coriander sprig for garnish

Method :

1. Cut potatoes into ½ inch pieces and set aside.
2. In a blender jar, add almonds and poppy seeds. Grind them to a fine powder and set aside.
3. In a bowl, add yogurt and the prepared fine powder, mawa, salt and green cardamom powder. Mix till well combined and set aside.
4. Heat oil in a non-stick pan, add red chillies and ginger. Sauté for 1 minute. Add the potatoes and sauté for 2-3 minutes on medium heat.
5. Add the prepared mixture and mix well. Cook for 4-5 minutes on medium heat.
6. Add lemon juice and mix well. Take it off the heat and transfer to a serving bowl.
7. Garnish with coriander sprig and serve hot.
