Sprouted moth beans cooked in spicy masala and best had with rotis or bhakri.

MATKI USSAL

Ingredients

2 cups sprouted moth beans (matki)
2 tbsps oil
1 large onion, finely chopped
½ tsp cumin powder
1 tbsp coriander powder
½ tsp turmeric powder
2 tsps Tata Sampann Chilli Powder
1 tsp mustard seeds
1 tsp cumin seeds
¼ tsp asafoetida (hing)
Salt to taste
1 tsp sugar
2 tbsps chopped fresh coriander leaves
Fresh coriander sprig for garnish
Rotis to serve

Method

1. Heat oil in a non-stick pan, meanwhile, transfer makti, onion, cumin powder, coriander powder, turmeric powder, Tata Sampann Chilli Powder and mix well.
2. Add mustard seeds in the hot oil and let them splutter, add cumin seeds and asafoetida and mix well. Add the prepared matki mixture and mix well. Cook on high heat for 3-4 minutes, sautéing occasionally.
3. Add 2 cups water and mix well. Cover and cook for 7-8 minutes.
4. Add salt, sugar and chopped coriander and mix well. Cover and cook for 10 minutes.
5. Garnish with coriander sprig and serve hot with rotis.
