Meatball Enchilada Casserole Gluten Free Rockin Robin Cooks

We are making a delicious meatball enchilada casserole. This is lower in carbs if you leave the tortilla chips out. This is full of flavor mostly due to the sauce. Perfect with Spanish rice & refried beans.

Meatball Enchilada Casserole Recipe
Ingredients:
1 lb. 100% Grass Fed Ground Beef
cup gluten free breadcrumbs Aleias gluten free breadcrumbs
1 cups grated cheddar cheese
yellow onion, super fine dice
1 egg
tsp garlic powder
1 tsp. Oregano leaves
cup cilantro, chopped
tsp. Salt
tsp. Ground cumin
1 cup organic whole kernel corn, drained
1 batch of Rockin Robins gluten free or regular enchilada sauce
Avocado oil

Garnish:
Avocado chunks
Green onion, chopped
Sour cream
Tortilla chips

Directions:
Preheat oven to 375 degrees F.

In a large bowl, place the ground beef and onion and combine with your hands. Sprinkle in the breadcrumbs and spices (oregano, cumin, salt, and garlic powder) and mix again. Crack the egg into the bowl and combine using your hand. Once blended add the cilantro and mix one last time.

Grab a small amount of ground beef mixture and make 1 to 2 inch sized meatballs by rolling between your two hands. Once you have at least 3 meatballs you can try your hand at juggling but only if you dare!

Once all meatballs are made go to the stove and preheat a large fry pan over medium heat. Add about 2 tsp. Of avocado oil to the pan.

Once the oil is hot add meatballs to the pan and cook for about 2 minutes or until each meatball is a golden brown. Turn the meatballs over and cook an additional 2 to 3 minutes. Cover the pan on the second side to ensure they all cook to at least 160 - 165 degrees F.

Pour enough enchilada sauce, about a cup, to cover the bottom of a baking dish, . I used an 8 x 8 inch baking dish.

Add the corn to the sauce and stir. Lay the meatballs on top of the sauce and push them down into the sauce. Drizzle more enchilada sauce on top of the meatballs and finish with the grated cheese. Place in a 375 degree F. oven for about 15 minutes.

Once the casserole is hot and bubbly and the cheese is melted, remove from the oven and garnish with avocado chunks, sliced green onion, sour cream, and tortilla chips. This recipe is gluten free if you use gluten free flour.
