We'll give you a behind-the-scenes look at our best shows, take you inside our favorite restaurant and be your resource in the kitchen to make sure every meal is a 10/10!BLT Lettuce WrapsRECIPE COURTESY OF MICHAEL SYMONLevel: EasyTotal: 30 minActive: 30 minYield: 4 servingsIngredientsOlive oil, for drizzling1 pound thick-sliced bacon, diced1/2 cup mayonnaise1 tablespoon Dijon mustardKosher salt and freshly ground black pepper2 cups diced tomatoes (from any ripe tomatoes you have on hand)1/4 cup finely sliced fresh chives1 head gem or Bibb lettuce, or endive, leaves separatedDirectionsSet up a grill for indirect heat by building the coals on one side only. If using a gas grill, heat one side only to medium-high heat.Place a cast-iron pan over the direct heat side of the grill. When the pan is hot, add a drizzle of olive oil along with the bacon. Cook until crispy, 5 to 8 minutes. (If the bacon is browning too quickly, move the pan to the indirect heat side of the grill to cook more evenly.) Drain the bacon fat and save for future use. (Bacon fat will last in your fridge for 3 to 5 months.)To a mixing bowl, add the mayonnaise and mustard and whisk to combine. Season lightly with salt and pepper. Fold in the tomatoes, chives and crispy bacon. To serve: Spoon the BLT mixture into lettuce leaves and arrange on a platter.
