Dry-roast dried red chillies in a non-stick pan till fragrant and grind into fine powder. 2. Dry-roast coriander seeds, mace, green cardamoms, fennel seeds, cinnamon, caraway seeds, cumin seeds, black peppercorns and star anise in the same non-stick pan and sauté till fragrant. 3. Add the roasted coriander seed mixture to the grinder and grind into fine powder.4. Store in an air-tight jar and use as required.
