Mixed Masala | Cooking With Archana | Sanjeev Kapoor Khazana

This Indian style Mixed Masala is raw and earthen, bursting with spice and flavour!

MIXED MASALA

Ingredients

2 cups dried red chillies, stems discarded and deseeded
4-5 tablespoons coriander seeds
1 blade mace (javitri)
3-4 green cardamoms
1 tablespoon fennel seeds (saunf)
2 one inch cinnamon
1 tablespoon caraway seeds
1 tablespoon cumin seeds (jeera)
1 tablespoon black peppercorns
1 star anise

Method

1. Dry-roast dried red chillies in a non-stick pan till fragrant and grind into fine powder.
2. Dry-roast coriander seeds, mace, green cardamoms, fennel seeds, cinnamon, caraway seeds, cumin seeds, black peppercorns and star anise in the same non-stick pan and sauté till fragrant.
3. Add the roasted coriander seed mixture to the grinder and grind into fine powder.
4. Store in an air-tight jar and use as required.
