MIXEDVEGETABLETIKKI
A great and yummy recipe with loads of veggies for kids to enjoy!

Ingredients

1 small potato, boiled, peeled and grated
2 tbsps grated red pumpkin
2 tbsps grated carrot
2 tbsps boiled and crushed green peas
2 whole wheat bread slices
Salt to taste
2 tbsps oil
Cheese slices for garnish

Method

1. Put bread slices in a blender jar and blend to a fine powder.
2. Take potato in a bowl, add red pumpkin, carrot, green peas, ground bread crumbs and salt and mix well.
3. Grease your palms with oil, divide the mixture into equal portions and shape each portion into a tear drop.
4. Heat oil in a non-stick pan, place the tikkis and shallow fry for 2 minutes on each side. Arrange them on a serving plate, garnish with cheese slices and serve.
