MOM-APPROVED MAKE AHEAD CAKES: In this episode of Food52s Genius Recipes, Kristen Miglore creates a nostalgic fever dream of a cake as a twist on the wondrous Raspberry Cake with Whipped Cream Filling by Shilpa Uskokovic, first published in Bon Apptit in March 2021 (and now a Genius Recipe on Food52). Its inspired by layered fruit and cream cakes in Japanese bakeries, and it also happens to be abundantly make-ahead-friendly, with layers of delicate, fluffy textures that are all perfectly fine being abandoned in the fridge for hours (and in fact, might prefer it).
