Mughlai Vegetable Biryani
Serves 5-6
Recipe in English:

Ingredients:
-Hari mirch (Green chillies) 5-6
-Adrak (Ginger) 1 inch piece
-Lehsan (Garlic) cloves 8-9
-Pyaz (Onion) 2 medium
-Pani (Water) 1/4 Cup or as required
-Dahi (Yogurt) whisked 3/4 Cup
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Namak (Salt) 1 tsp or to taste
-Haldee powder (Turmeric powder) ½ tsp
-Dhania powder (Coriander powder) 1 & ½ tbs
-Kaju (Cashew nuts) powder 1 & ½ tbs
-Ghee ½ Cup
-Zeera (Cumin seeds) ½ tbs
-Badi elaichi (Black cardamom) 1
-Hari elaichi (Green cardamom) 3
-Badiyan ka phool (Star anise) 1
-Laung (Cloves) 3
-Darchini (Cinnamon stick) 2
-Tez paat (Bay leaves) 2
-Knorr chicken cubes 2
-Aloo (Potatoes) cubes 1 Cup
-Phool gobhi (Cauliflower) 1 Cup
-Gajar (Carrots) ½ Cup
-Matar (Peas) ½ Cup
-Pani (Water) ½ Cup or as required
-Kali mirch (Black pepper) crushed 1 tsp
-Kewra water 1 tsp
-Shimla mirch (Capsicum) cubes ½ Cup
-Hara dhania (Fresh coriander) chopped handful
-Podina (Mint leaves) chopped handful
-Pyaz (Onion) fried 3-4 tbs
-Cream 1/4 Cup
-Zarda ka rang (Yellow food color) ½ tsp
-Dahi (Yogurt) 1 tbs
-Chawal (Rice) ½ kg (soaked & boiled until 3/4th done)
-Pyaz (Onion) fried

Directions:
-In blender,add green chillies,ginger,garlic,onion and water,blend well & set aside.
-In bowl,add yogurt,red chili powder,salt,turmeric powder,coriander powder,cashew nuts powder,mix well & set aside.
-In pot,add ghee and let it melt.
-Add cumin seeds,black cardamom,green cardamom,star anise,cloves,cinnamon sticks,bay leaves and mix.
-Now add grinded onion mixture,mix well and cook for 6-8 minutes.
-Add knorr chicken cubes and mix well.
-Add potatoes,cauliflower,carrot,peas and mix well.
-Add water and mix well,cover and cook on low flame for 4-5 minutes.
-Now add spiced yogurt and mix well.
-Add black pepper crushed,kewra water and mix.
-Add capsicum,mix well and cook on high flame until oil separates.
-Add mint leaves,fresh coriander and fried onion.
-In cream,add yellow food color and yogurt,whisk well and add it in pot.
-Add boiled rice,fried onion,cover and steam cook on low flame for 8-10 minutes & serve!

Tarkeeb:
-Blender mein hari mirch,adrak,lehsan,pyaz aur pani dal ker ache tarhan blend ker lein & side per rakh dein.
-Bowl mein dahi,lal mirch powder,namak,haldee powder,dhania powder aur kaju powder dal ker ache tarhan mix ker lein & side per rakh dein.
-Pot mein ghee dal ker melt ker lein.
-Zeera,badi elaichi,hari elaichi,badiyan ka phool,laung,darchini aur tez paat dal ker mix karein.
-Ab grinded pyaz mixture dal ker ache tarhan mix karein aur 6-8 minutes kliya paka lein.
-Knorr chicken cubes dal ker ache tarhan mix karein.
-Aloo,phool gobhi,gajar aur matar dal ker ache tarhan mix ker lein.
-Pani dal ker mix karein aur dhak ker halki ancch per 4-5 minutes kliya paka lein.
-Ab spiced dahi dal ker ache tarhan mix ker lein.
-Kali mirch crushed aur kewra water dal ker mix karein.
-Shimla mirch dal ker ache tarhan mix karein aur tez ancch per oil alag hunay tak paka lein.
-Podina,hara dhania aur fried pyaz dal dein.
-Cream mein zarda ka rang aur dahi dal ker ache tarhan whisk karein aur pot mein dal dein.
-Boiled chawal aur fried pyaz dal ker dhak dei aur halki ancch per 8-10 minutes kliya steam cook ker lein & serve karein!
