Mushroom Walnut Crostini | Sanjeev Kapoor Khazana

Mushroom Walnut Crostini makes a delicious start to any dinner party. Its Crunchy and creamy feel will leave your guests wanting more of this delightful appetiser!

MUSHROOM WALNUT CROSTINI

Ingredients

8 baguette slices
6-7 button mushrooms, sliced
¼ cup coarsely crushed walnuts
30 grams Emmenthal cheese, cut into thin slices
1 tablespoon olive oil
1 tablespoon chopped garlic
1 medium onion, finely chopped
Salt to taste
Crushed black peppercorns to taste
2-3 fresh thyme sprigs
Mixed micro greens (mustard, amaranth and green peas) as required

Method

1. Preheat oven to 180° C.
2. Place baguette slices on a baking tray and put 2-3 emmenthal slices on each slices. Put the tray into the preheated oven and bake till the cheese melts.
3. Heat olive oil in a non-stick pan. Add garlic and sauté for 30 seconds. Add onion and sauté till translucent.
4. Add button mushrooms and sauté for 1 minute. Add salt and crushed peppercorns, mix and cook till mushrooms are golden brown. Add fresh thyme leaves and mix, Add walnuts and mix well.
5. Spread some mushroom mixture on the prepared baguette slices and put some mixed micro greens on top.
6. Serve.
