Musubi Croquettes with Jen Phanomrat | Tastemade

RECIPE
Ingredients:
For the filling:
6 tbsp butter
2 tbsp scallion, thinly sliced
12 oz Spam, minced
1 ½ cups whole milk
½ cup all-purpose flour
½ cup cooked sushi rice
For the rest:
1 cup all-purpose flour
2 eggs, beaten
1 cup panko
Roasted nori sheets, cut into strips

Steps:
1. In a pan on medium heat, melt butter and saute scallions. Then add in Spam and cook for about 2 minutes. Whisk in flour and cook for about a minute. Add milk and whisk until well combined. Once thickened, stir in rice and simmer for a few minutes. Transfer to a container with a lid. Refrigerate until firm, about 2 hours.
2. Scoop small amounts of the mixture and roll into small, thumb-sized logs, with oiled hands. Dredge logs first flour, then beaten egg, and then coat well in panko. Place in the freezer for 10 minutes.
3. Heat oil in pot to 375°F. Fry until crispy and golden brown and drain on a rack or paper towels.
4. While still hot, wrap the middle of each croquette with a nori strip and seal with a little water.
