Nargisi Kofta Biryani
Serves 5-6

Ingredients:
Homemade Biryani Masala:
-Zeera (Cumin seeds) 1 tsp
-Hari elaichi (Green cardamom) 2-3
-Badi elaichi (Black cardamom) 1
-Laung (Cloves) 2-3
-Darchini (Cinnamon stick) 1
-Jaifil (Nutmeg) 1/4 piece
-Javatri (Mace) 1 blade
-Shahi zeera (Caraway seeds) 1/4 tsp
-Sabut kali mirch (Black peppercorns) 4-5
-Lal mirch powder (Red chili powder) ½ tbs or to taste
-Namak (Salt) 2 tsp or to taste
-Haldee powder (Turmeric powder) 1 tsp
-Aloo bukhara (Dried plums) 4-5
-Laung (Cloves) 3
-Badiyan ka phool (Star anise) 1
-Sabut kali mirch (Black peppercorns) 9-10
-Badi elaichi (Black cardamom) 1
-Hari elaichi (Green cardamom) 2
-Tez paat (Bay leaves) 2
-Pyaz (Onion) 1 medium
-Hara dhania (Fresh coriander) 2 tbs
-Hari mirch (Green chili) 3-4
-Beef qeema (Lean Beef mince) 450 gms (dried)
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Zeera powder (Cumin powder) ½ tsp
-Haldee powder (Turmeric powder) ½ tsp
-Lal mirch powder (Red chili powder) ½ tsp or to taste
-Baisan (Gram flour) roasted 3/4 Cup
-Namak (Salt) 1 tsp or to taste
-Anday (Eggs) hard boiled 4
-Cooking oil for frying
-Ghee ½ Cup
-Pyaz (Onion) sliced 2
-Tamatar (Tomatoes) sliced 2-3
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Dahi (Yogurt) whisked 1 Cup
-Prepared biryani masala 3 tbs or to taste
-Hari mirch (Green chillies) 3
-Podina (Mint leaves) handful
-Hara dhania (Fresh coriander) handful
-Chawal (Rice) basmati 2 Cups (soaked & boiled until 3/4th done with whole spices & salt)
-Dahi (Yogurt) whisked 1 Cup
-Zarda ka rang (Yellow food color) ½ tsp or as required
-Podina (Mint leaves)
-Hara dhania (Fresh coriander)

Directions:
-In spice mixer,add cumin seeds,green cardamom,black cardamom,cloves,cinnamon stick,nutmeg,mace, caraway seeds,black peppercorns,red chii powder,salt,turmeric powder and grind to make a fine powder.
-In bowl,add ground spices,dried plums,cloves,star anise,black peppercorns,black cardamom,green cardamom,bay leaves and mix well.Homemade biryani masala is ready!
-In chopper,add onion,fresh coriander,green chillies and chop well.
-Add beef mince,ginger garlic paste,cumin powder,turmeric powder,red chili powder,gram flour,salt and chop until well combined.
-Take a mixture and make a ball,flat it on your palm then put boiled egg,prick with skewer and coat with a thick layer of mince.
-In wok,heat cooking oil and fry koftay on low flame until golden brown.
-In pot,add ghee and let it melt,add onion and fry until golden.
-Add tomato,ginger garlic paste,mix well and cook until tomatoes are soft.
-Add yogurt and mix well.
-Add prepared biryani masala,mix well and cook for 2-3 minutes.
-Add green chilies,mint leaves,fresh coriander and mix.
-Now add fried nargisi koftay,cover and cook on low flame for 6-8 minutes then take out koftay in a bowl & set aside.
-In pot,add boiled rice,in yogurt,add yellow food color and whisk well.
-In pot,add dissolve food color with yogurt and again add boiled rice.
-Add fried koftay,mint leaves and fresh coriander,cover and steam cook on low flame for 6-8 minutes & serve!
