Learn how to bake the perfect Neapolitana pizza with the finest sauce, fresh basil leaves and loads of bocconcini cheese!

NEPOLITANA PIZZA

Ingredients

2 cups refined flour (maida) + for dusting
15 grams fresh yeast
1 tsp salt
2 tbsps olive oil
Pizza sauce as required
Parmesan cheese powder to sprinkle
150 grams Bocconcini cheese
Fresh basil leaves as required
Extra virgin olive oil to drizzle

Method

1. Take fresh yeast in a bowl. Add 2 tbsps water and set aside.
2. Take refined flour in a bowl. Add salt and mix. Add the yeast mixture, ½ cup water, olive oil and mix.
3. Add ½ cup more water and knead to soft dough. Cover with a moist muslin cloth and set aside for 1 hour.
4. Knock back the dough, dust some refined flour on the surface, divide the dough into 2 equal portions and spread into a thick disk with the help of fingers.
5. Preheat the oven at 200ºC.
6. Dust some more flour on a wooden board and place the pizza base on top.
7. Spread a generous portion of pizza sauce on top, sprinkle parmesan cheese powder.
8. Cut the bocconcini cheese into slices and arrange on top.
9. Place in preheated oven and bake for 10-15 minutes.
10. Arrange basil leaves on top, drizzle extra virgin olive oil and serve.
