Nigerian Buns Recipe - Egg Free & Dairy Free

2 cups self-raising flour (or mix 2 cups plain flour with 2 level teaspoons baking powder)
1/4 teaspoon salt
4 tablespoons caster sugar
1 and 1/4 cups plant-based milk (such as soya milk)
1 teaspoon vanilla extract
2 cups sunflower oil for deep-frying

These are vegan Nigerian buns. Not baked or steamed, but fried to golden perfection. If you want something sweet, simple and satisfying then these should hit the spot. These little fried dough balls are like puff puffs crunchier, yeast-free cousin with a crispy outside and soft, dense interior. Buns are typically made with eggs and milk, in addition to flour and sugar but this vegan version uses plant milk or you can opt for vegan yoghurt for extra richness. Youll want to flavour with a dash of vanilla or nutmeg to make them extra irresistible. Fry them in neutral oil, turning them often until golden brown all over, then drain on some kitchen paper.
