Ingredients
1.5 cups quinoa
1 can artichoke hearts chopped
lb Sausage
1/2 cup parsley
1/2 cup red onion
1 Red bell pepper chopped
1 can of chickpeas

Dressing:
1/2 cup olive oil
1 clove minced garlic
1/4 red wine vinegar
Cup lemon juice
2 tbsp honey
Salt and pepper to season

Directions

Cook your quinoa according to the box instructions and set aside to cool.
Afterwards, roll the sausage into small pieces and cook in a medium sized pan for 6-8 minutes.
The rest is simple! In a large mixing bowl, combine your quinoa, artichoke hearts, sausage, bell pepper, chickpeas, parsley and red onion then mix it all together.
After that, go ahead and make your dressing by adding all the dressing ingredients into a small processor and mixing thoroughly.
Pour that over the quinoa mix and stir with thongs for easier mixing. Portion everything into your meal prep containers, top with lemon and store for the week!
