You can make this recipe by using all the short cuts or you can make this totally from scratch. I prefer the totally from scratch version because I like to keep my food as clean as possible.

Nutella Chocolate Chip Cookie Ice Cream Sandwich

If you are using store bought Nutella, you will want to refrigerate the jar so the nutella will be firm and scoop-able.

If you are making my homemade nutella, you will want to freeze the portion you are using for this recipe. Refrigerating it won't make it firm enough.

Cookie Portion:
Ingredients:

1/2 cup brown sugar, firmly packed
1/2 cup sugar
1/2 cup organic butter, softened
1 egg
1 tsp. vanilla extract
1 cup flour
1 cup oat flour
1 1/2 tsp. baking soda
1/2 tsp. salt
9 oz. milk chocolate chips, Guitard is my favorite brand

Directions:
Preheat oven 350 degrees F.
Cream the butter, white sugar, and brown sugar together until it is light and fluffy.

Then add the egg and the vanilla and mix until just incorporated. Do not over mix.

Mix all dry ingredients: both flours, baking soda, and salt in a separate bowl and add this mixture, 3 large spoonfuls at a time to the sugar mixture.

Mix until the flour dissolves into the sugar/butter mixture. Repeat until all the flour is blended in.

Add the chocolate chips and fold them in.

Use a medium size ice cream scoop to scoop out some cookie dough into your hand. Make a hole in the center of the dough to place the nutella in.

Place a small scoop of nutella into the hole in the dough and pinch it shut. If it doesn't cover completely, add more dough to the top of the cookie and mold it shut so the nutella can't ooze out.

Do this to all the cookies and place them on a parchment paper lined cookie sheet.

Bake at 350 degrees F. for 13 to 15 minutes or until golden brown.

Remove the cookies to a cooling rack and let them cool completely.

Take a pint size of ice cream and cut off the bottom part in the form of a disk. The cut slices of the carton about 1/2 inch thick.

Peel the card board around the ice cream and place the disk between two cookies. Enjoy!

These ice cream sandwiches are best eating right away. If you freeze them, be sure to take them out of the freezer 10 to 15 minutes before serving.
