You are going to love this sheet pan sausage and vegetables. It is bursting with flavor!

One Pan Sausage & Veggies
Use enough veggies to fill 2 baking sheets in a single layer.

Ingredients:
2 - 3 Aidells Apple Chicken sausages, cut into bite size pieces
1 organic orange bell pepper, rinsed and cut into 1 inch size pieces
1 yellow onion, peeled sliced into 1 inch chunks
1 large zucchini, cut into 1 inch size pieces
1 medium organic sweet potato, peeled and cut into 1 inch size pieces
1 handful of asparagus, rinsed, trimmed and cut into bite size pieces
Avocado oil
Tamari sauce
tsp. Ground coriander
tsp. Garlic powder
tsp. Salt
Handful of fresh Italian parsley, chopped fine
1 lime

Directions:
Preheat oven to 500 degrees F.

Place all the cut up veggies and sausage, divided onto 2 baking sheets lined with foil. I actually mentioned using parchment paper but failed to remember that parchment paper is usable in temperatures up to 425 F.

Drizzle a tablespoon or more of avocado oil over the veggies on each pan and toss to coat. Drizzle 1 tablespoon of Tamari sauce over each pan and toss again.

Combine the coriander, garlic powder and salt to a dish and stir to combine. Sprinkle this mixture over all the veggies and sausage and toss to coat one last time.

Place in the oven for 15 minutes at 500 degrees F. Rotate the pans half way through cooking. When done, remove from the oven and add the chopped parsley and then press lime over each pan. Toss with a spatula and serve. Enjoy!
