This recipe (https://www.carolinescooking.com/fabada-asturiana-pork-bean-stew/) gives a good overview of how to make an Asturian fabada. The stew I made is a variation on this. However, I used the large judiones (use whatever big white means you can find).Also, to "scary" the beans, you should pour a little cold water in three times over the 2-3 hours cooking time. Then bring it back to the boil again.To thicken this stew, at the end I fried a little onion, Spanish paprika and flour to create a paste, and poured that into the stew.Once you understand how these stews are made, you can swap out other meats, add veggies etc. Enjoy!WHO ARE WE?
