Paal Satham & Corn Veg sundal-Navarathiri- Day 5 | Gayathiri's Cookbook

Navrathiri is a nine days festival dedicated to goddess Durga.During these 9 nights and 10 days, goddess Durga is worshipped in 9 different forms.Numerous rituals are followed during Navratri. These rituals vary from state to state and within a state region to region.During Navratri, various dolls are collected and displayed in multiple steps for public viewing. The displaying of dolls during "Golu festival" is so popular that it is also known as doll festival.

In South India, apart from public display of dolls, 9 days of Navratri are divided into three equal numbers of days. Goddess Durga as Kali is worshipped during the first 3 days of Navratri. After Goddess Durga, for next 3 days Goddess Lakshmi, the goddess of wealth and prosperity is worshipped. During the last 3 day of Navratri Goddess Saraswati, the goddess of learning and knowledge is worshipped.
Each day of the festival stands for an auspicious colour, which is dedicated to all the avatars of the Goddess.

Navarathiri- Day 5 Prasadham:
Paal Satham & Corn Veg sundal

Ingredients for paal satham:
Rice- 1/4 cup
water- 3/4 cup
Milk- 1/2 cup
Sugar- 1 cup
Cardamom-1
Cashews- 4
Raisins- 4

Directions for paal satham:
1. Dry roast 1/4 cup rice for 2 minutes and grind it to a coarse powder.Pressure cook this with 3/4 cup water and 1/2 cup milk for upto 3 whistles.
2.Boil 2.5 cups milk until its reduced to half the quantity. Add cooked rice and stir well.
3. Add 1 cup sugar and cardamom.Wait until it is dissolved, then switch off the heat.
4. Fry some cashews and raisins in ghee and add it to paal satham.
Paal Satham is ready!!

Ingredients for Corn veg sundal:
Corn- 1 cup
Salt- 1/2 tsp
Oil- 2 tsp
Mustard seeds- 1/2 tsp
Grated carrots- 1/4 cup
Grated cucumber- 1/2 cup
Black pepper powder- 1/2 tsp
Curry leaves- for garnishing

Directions for Corn veg sundal:
1.Cook 1 cup corn in water with salt. Strain the water and keep it aside.
2. Heat 2 tsp oil in a pan. Add mustard seeds. When it starts to crackle, add cooked corn and sauté for 2 minutes. Then switch off the heat.
3.Add 1/4 cup grated carrots,1/2 cup grated cucumber(squeeze the juice out and then add it).
4.Finally add pepper powder and Curry leaves
Corn veg sundal is ready!!
