Pakundalu is a healthy sweet/ Dessert Sankranthi festive special from Andhra Pradesh. A healthy one as it is made with homemade Rice Flour, Jaggery Grate, and Coconut Grate. It is also referred to as Pakam Undalu or Rice Flour & Coconut Fritters. Pakundalu | సంక్రాంతి పిండివంటలు బెల్లం పాకుండలు తయారీ | How to make Pakundalu Recipe in TeluguIngredients:Whole Rice (Doddu Biyyam): 1/2 KgJaggery Grate: 1/4 KgSesame Seeds: 2 TablespoonsCoconut Grate: 2 Tablespoons ( fresh or dried)Cardamom Powder: 1/2 TeaspoonOil: for deep frying#pakundalu #pindivantalu #sankrathirecipe #HyderabadiRuchuluMethod of Preparation:Wash and soak whole Rice (Doddu Biyyam) for Min 8 Hours or overnight.Drain off the water and place them in a sieve to remove excess water.Add the rice to the mixie jar and grind it into a powder.As the quantity is less we can grind it at home, or can be sent to a mill.Sieve the ground flour, we can see the flour is moist.
